Love Chef Randy’s Roux creations?  Make them for yourself at home!  Chef Randy is sharing some of his favorites:

Thanksgiving Day Feature:  Pecan Streusel Topped Sweet Potatoes 

Bake Sweet potatoes, then peel.  Place in mixer, add, butter and salt/pepper.  Mix potatoes.

Pecan Streusel Topping:

1 cup all-purpose flour
1 cup packed brown sugar
1/2 cup cubed cold butter
1 cup Pecan pieces

Combine flour, sugar, and butter in mixer on low until crumbled and combined.
Add pecans and mix evenly, top on sweet potatoes.  ENJOY!
